School & Work Lunch Ideas & Recipes Featuring iHerb

Hi loves! Today I have partnered with iHerb to share some lunch ideas that are perfect for school and work.

The first recipe is a fun twist on the classic chicken salad. I personally prefer this version since it’s creamier and tangier. You could also serve this with crackers or eat it alone 🙂 

 Avocado Chicken Salad Sandwich
Ingredients:
– 1 chicken breast
garlic salt to taste
– red onion
– half an avocado
– 1/2 lemon
– 2T plain greek yogurt
– toasted pumpernickel bread
– romain lettuce
– optional balsamic glaze
Directions: Cook the chicken breast with garlic salt. Dice the chicken and mix with avocado, lemon, greek yogurt and a sprinkle of garlic salt. Serve with pumpernickel bread and romaine lettuce. You can also add tomatoes!

Out of all the easy recipes, these chicken coconut wraps have to be my favorite and the tastiest of them all. Seriously, you’ll think you’ve stepped into a delicious Thai restaurant!

Coconut Chicken Wrap
Ingredients:
– 1/4C cabbage slaw
– 2T vinegar of your choice
– 1 baby cucumber
garlic salt to taste
– 1 chicken breast
– 2T coconut and peanut dip
coconut wraps
– chili paste
Directions: Add vinegar to cabbage slaw and let it marinate while you slice your cucumber in thin strips. Season chicken with garlic salt and once it’s fully cooked add the peanut dip, stir and turn off stove. Warm up coconut wraps on the stove for 1 minute on each side and add all your ingredients, roll, and enjoy!

I am a huge fan of lettuce wraps; they are tasty and I can eat a few without feeling guilty. These chicken wraps are taken to another level with Spanish sliced olives. The key for all of these recipes is to prepare most of the food at the beginning of the week so they can be easily tossed together last second. 

Chicken Olive Lettuce Wraps
Ingredients:
– 2-3 chicken breast
– 1C chicken stock
– 2t cumin
garlic salt to taste
– white pepper to taste
– 1/2C crushed tomato
– 1/4C spanish sliced olives
– 1T black beans
– 1/2 avocado
– lime
– cilantro for garnish
Directions: Combine chicken, chicken stock, crushed tomatoes, salt, cumin, and olives in slow cooker. Cook on low for 6-8 hours or high for 2-3 hrs. Add shredded chicken, beans and avocado to romain lettuce and enjoy!

I try to keep my carb intake low during the week but I get the occasional urge to indulge in a big bowl of noodles. Would you believe me if I told you that I can indulge guilt free with this spicy noodle veggie bowl? Yup! That starchy urge is quickly zapped but I get zero carbs and calories with these miracle noodles! 

Spicy Noodle Veggie Bowl 
Ingredients:
– veggies of your choice
– 1t minced garlic
coconut amino or soy sauce
– chili paste to taste
– sriracha to taste
– 3T rice vinegar or any on hand
– 3T sesame oil
miracle noodles
– cilantro
– sesame seeds
– green onions

Directions: Sautee veggies with half of the sesame oil. After the veggies haves softened add garlic, chili paste, Sriracha, coconut amino and remaining sesame oil; turn stove off. Prepare noodles according to package, drain and drop into the veggie mixture. Garnish with sesame seeds and green onions and enjoy!
