Potato & Leek Soup With Apples & Cheddar Cheese Served With Brie Melt

Hi guys! Aside from the cool crisp weather, leggings and trench coats, I also love the variety of foods that the fall time has to offer. Apples are in abundance and they are not just for apple pies anymore. I’m sharing some ways that you can make delicious savory dishes using apples!

Potato & Leek Soup With Apples & Cheddar



– 2-3 russet potato
– 1 Leek chopped
– 1-2 red apples
– 4C chicken broth
– 1/2C cream
– 1C cheddar cheese (optional_
– 1T minced garlic
– 1 bay leaf
– 2 chicken bouillon cubes
– salt to taste
– rosemary to garnish
Apple Brie Melt
– toasted sourdough bread
– red or green apples
– brie cheese
– arugula or any greens of your choice
– extra virgin olive oil
– red wine vinegar
– salt & pepper
– honey
