Lemon Orzo Soup Recipe

This lemon orzo soup Is so easy to Throw together and packed with flavor. You can also make It on the stove If you don't own a pressure cooker.

  • 1 T Olive Oil
  • 1 Small Medium Onion, Diced
  • 2 Stalks of Celery, Diced
  • 2 Medium Carrots, Diced
  • 3/4 C Orzo
  • 1 Large Garlic Clove, Minced
  • 1/4 C Lemon Juice (About 3 large lemons)
  • Zest of 1 Lemon
  • 6 C Chicken Stock or Broth
  • 1 T Fresh Dill
  • 1 T Fresh Thyme
  • 2 Eggs
  • Garlic Salt to taste
  • Celery Salt to taste


  • Chop all vegetables beforehand. Turn instant pot to sauté add olive oil, carrots, onions, and celery into pot with some sea salt and sauté for about 5 minutes. Add garlic, sauté for 1-2 more minutes. Add chicken stock, and mix. Add orzo and set high pressure cooker to 6 minutes. As soon as the times goes out do a quick release on the pressure.
  • For extra flavor, we are adding fresh dill and thyme, cut it up very finely and add into mixture. Add 2 eggs to mixing bowl, whisk until the eggs foam up and add lemon juice into mixture. Temper the eggs by adding one laddle at a time and adding the hot mixture to the egg mixture. Zest and entire lemon onto soup for some extra flavor. Season with celery and garlic salt to taste. Top with dill and lemon wedges.
