Lately, I’ve been really into one pan meals AKA really easy to clean up meals. My husband loves them too because he’s the one in charge of dirty dishes and, in this case, there are none! These meals take very little time to assemble and leave you with a lot of free time to do other stuff. I am still not fully accustomed to having the oven do all the work for me so I tend to hover and hang out in the kitchen. Kind of seems like I might have a little bit of separation anxiety or maybe it’s trust issues. I was convinced the oven couldn’t possibly yield the same result as a stove top meal that I have full control over. These 3 fall inspired sheet pan dinners have proved me wrong. First up is my personal favorite. Crispy chicken thighs with autumn roasted veggies. I included measurements to all the spices but honestly this is one of those dishes you just kind of eyeball and season to your liking. There’s no right or wrong way. The trick here is to get the cooking time and temperature right and make sure all your veggies are cut up the same size so they cook evenly. I also picked all these veggies on purpose because they take around the same time to cook. The carrots end up a bit on the firm side so if you like them softer, I would throw them in 15 minutes before everything else. Aside from being super delicious, this sheet pan dinner would make a great presentation for a dinner party!
Do you have a picky toddler? Oh wait, that’s me. Well… sometimes. Honestly, Sebastian likes what he likes when he likes it. And just because he liked it yesterday doesn’t mean he will like it today. Unless it’s these Cranberry & Feta Turkey Balls, he likes these all the time :). So if my picky toddler loves these, that has to mean they’re amazing, right?! I love that you can make a big batch of these and freeze them for later. My favorite way of serving them is with these simple lemon garlic zucchini and squash and a side of quinoa.
I love taking simple dishes and making them into something special with a few unusual ingredients. Like these roasted sweet potatoes with goat cheese and pumpkin seeds; they pair so beautifully with this maple & balsamic salmon. If you don’t want to use aluminum foil, you can always cook the salmon in a separate baking dish to reserve the sauce. Trust me, you want to reserve the sauce, I could literally drink it with a spoon; its’ that good! I love serving these on a bed of arugula or spinach and then drizzling the maple sauce on top.
CRANBERRY & FETTA TURKEY BALLS WITH ROSTED VEGGIES SHEET PAN DINNER
Ingredients
Cranberry & Feta Turkey Balls
- 1 lb turkey
- 1/2 cup milk
- 1/2 small red onion minced
- 1/2 cup fetta
- 1/2 c Italian breadcrumbs
- 1 medium egg
- 2 Tablespoons chopped pistachios
- 1/4 cup chopped dried cranberries
- 1/2 teaspoon garlic salt
- 1/4 teaspoon salt
Veggies
- zucchini
- squash
- lemon dressing
Lemon Dressing
- 2 Tablespoons lemon juice
- 1/2 clove garlic zested
- 1/4 cup olive oil
- to taste salt
- to taste pepper
Instructions
- Preheat oven to 400 degrees
- Combine turkey, cranberries, pistachios, egg, feta, onion, breadcrumbs, milk and form large size balls. Should yield 6 large turkey balls. Combined lemon dressing and massage into zucchini, squash and bell pepper. Spread evenly on sheet pan and bake for 30 minutes. Broil for an additional 2-3 minutes or until meatballs are golden brown. Serve with Quinoa or brown rice.
CRISPY CHICKEN & AUTUMN ROASTED VEGGIES SHEET PAN DINNER
Ingredients
Chicken
- Ingredients
- 4-6 chicken thighs
- 3 Tablespoons Avocado oil or olive oil
- 1/2 teaspoon Seasoning salt
- 2 teaspoons Garlic powder
- 2 teaspoons Paprika
- 1/2 teaspoon whitepepper or black pepper
Veggies
- Brussels sprouts
- Mix of 3 color potato or Yukon gold
- carrots
- 1 red bell pepper
- Salt & pepper to taste
- balsamic dressing
Balsamic Dressing
- 1 Tablespoon of fresh rosemary or 1 teaspoon of dried
- 3 teaspoons of fresh thyme or 1/4 teaspoon of dried
- 1/2 teaspoon dried dried basil
- 1/2 teaspoon garlic powder
- 3 Tablespoons of balsamic vinegar
- 1/4 cup olive oil or avocado oil
Instructions
- Preheat oven to 400 degrees.
- Rub chicken with seasoning salt, paprika, garlic powder, white pepper and avocado oil and set aside.
- Combine ingredients to make balsamic dressing and coat all the veggies evenly.
- Place chicken on top of veggies and Bake for 40 minutes.
- Remove from oven and sprinkle freshly grated Parmesan and sliced almonds.
Notes
MAPLE SALMON WITH FALL HARVEST SWEET POTATO SHEET PAN DINNER
Ingredients
Salmon
- 4 filets wild caught salmon
- 1/4 c maple
- 2 Tablespoon balsamic vinegar
- 1/4 C low sodium soy sauce
- 1/8 teaspoon orange zest
- 1 Tablespoon orange juice
- 1 garlic clove zested
Fall Baked Sweet Potato
- 3-4 small sweet potatoes cubed
- 3 Tablespoons goat cheese
- 3 Tablespoons of avocado oil or olive
- 2 Tablespoons Roasted pumpkin seeds
- Salt to taste
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 400 degrees
- Combine, maple, balsamic vinegar, soy sauce, orange zest, orange juice and zested garlic. Create a bowl out of aluminum foil and place you salmon inside with the skin up. Pour marinade over salmon and set aside to marinade.
- Chop sweet potato into small squares, drizzle with avocado oil and season with salt. Bake sweet potato for 15 minutes.
- Remove sweet potato from oven, add salmon fillets and flip them over so the skin is down and place the aluminum bowl next to the sweet potato. Sprinkle pumpkin seeds and garlic powder on sweet potato and bake for 10 minutes. Broil for an additional 2 -3 minutes.
- Remove from oven and add goat cheese to sweet potato. Serve on a bed of arugula or spinach.Optional, garnish with fresh thyme.
