Would you believe me if I told you that one of the most luxurious resorts in Mexico is also all-inclusive? During my recent stay at Grand Velas Riviera Maya, I was completely blown away, not only by the breathtaking ocean views and impeccable service, but by the food. This trip was filled with unforgettable dishes, vibrant taco culture, and even a Michelin-star dining experience that inspired me to recreate one of my favorite ceviches when I got home.
The Tacology Event: A Celebration of Taco Culture
I was invited to attend Tacology, Grand Velas’s taco and salsa-making event. It’s a fully immersive experience where chefs share their secrets to creating authentic flavors, from roasted salsas to perfectly seasoned meats. As someone from San Antonio, the unofficial capital of tacos, I can confidently say these were some of the best tacos I’ve ever had.

Dining Highlights: From Breakfast in Paradise to Michelin-Star Magic
Every meal felt like a culinary journey. We enjoyed breakfast on our terrace overlooking the peaceful ocean water, lunch by the pool with fresh ceviches and grilled seafood, and a dinner at Azul, the resort’s buffet restaurant that felt nothing like a typical buffet. Everything was freshly prepared, plated beautifully, and bursting with flavor.
Our last night was extra special , a farewell beach party under the stars, followed by an unforgettable 12-course dinner at Cocina de Autor, the resort’s Michelin-star restaurant. The attention to detail was unreal, with flavors that danced between traditional Mexican roots and modern artistry. Chili Crisp Ceviche
Back home, I couldn’t stop thinking about the fresh ceviche I tried poolside so I attempted to recreate it at home and, well, it didn’t taste anything like it but it was still very delicious! Turns out the ceviche from Mexico used Salsa Matcha and not the Chili Crisp that I used LOL. But here’s the one I made in case you want to try!

Final Thoughts
My time at Grand Velas Riviera Maya reminded me that food connects us to a place more deeply than anything else. Whether it’s learning to make salsa from a local chef or recreating a dish that takes you back to the ocean breeze, every meal becomes a story worth telling.
